Here’s the plan for the week. Once again, I’m not trying any new recipes. I really need to get back into the habit of doing that, but lately, it just seems easier to plan stuff that we like and that I have the ingredients for on hand. I keep a *really* well-stocked pantry and freezer :mrgreen:. As always, thanks to Laura, for hosting this every week!

Sunday – Buffalo Chicken Sausage sandwiches (review coming soon), coleslaw

Monday – Shrimp Fried Rice, stir-fried veggies

Tuesday – Cheeseburger Macaroni, green beans, salad

I didn’t get to make a menu last week, as we were out of town on vacation for the better part of the week. I’m looking forward to trying to get back on track, and on a schedule this week. I work a lot better with a plan!

Last week was hit and miss, with sticking to the menu. Tim got sick and we altered a couple of meals to better suit him. Also, I think I’m going to have to give up on ever trying the new recipe for Honey Mustard Pork Chops. Two weeks ago, we had a different meal and I didn’t even take the chops out of the freezer. This past week, I took them out, and oh about 5 PM, went to look for my recipe to see about the marinade. I discovered that I had forgotten that this was a marinate all day or all night type of recipe. Rather than risk just marinating the chops a few minutes, we went ahead and used the regular bottled teriyaki marinade we usually use on pork chops. Sigh. I like to think I’m so prepared, but obviously that is NOT always the case.

This week is a short one, we have a lot of family stuff coming up over the long holiday weekend and I won’t even plan anything for then. Last week went pretty much according to plan, except that I didn’t make the new recipe for Honey Mustard pork chops that I wanted to try. I am going to move it to this week and give it a shot. On that night, I decided to make some Chinese food. So, we had a chicken stir fry with brown rice, some eggrolls, and I tried a new recipe for Egg Drop Soup. I liked the soup and will make it again, but with changes. I used low-sodium chicken broth (what I had on hand), and didn’t think to add salt. I will next time, and I will also use less cornstarch. I didn’t have green onions, but they would help, as would a dash of either rice wine vinegar or soy sauce. It was good though, and we both liked it, and it was very easy.

I’m sticking with mostly tried and true stuff this week, with the exception of one lone new recipe. And to top that, everything else is chicken. First, a quick update from last week. I tried two new recipes, both good. I liked both of them and Tim liked one of them. The crockpot lime chicken tacos were good and I’d have them again, but Tim said he preferred my regular salsa/taco seasoning recipe. I should have known better than to try something with lime. Tim generally doesn’t like citrus stuff in food. I know not to make orange or lemon flavored anything. I should have known better on the lime flavor 🙂 The crockpot Italian wedding soup (which I renamed crockpot MEATBALL soup so that Tim would try it), was good. I am going to make a few changes on it next time, to suit our tastes more. All in all, a really successful week.

This week is going to be less adventurous (no new recipes) and more in line with our new purchase over the weekend (See this post below to Ooh and Ahh at my new appliances and Tim’s new grill). I’m putting several things on the menu that Tim can grill out 😀

I’m afraid there’s not too much original on the menu this week. Most of it is a roll-over from last week. We had some stuff come up and I didn’t get to make but 2 or 3 of the things on my menu from last week, so I’m going to push them on into this week. Isn’t that always the way things to go sometimes? 🙂 Plus, we’re trying to do a little better (after splurging most of the weekend on pizza and take-out Chinese), so I’m putting salad on the menu for two nights in a row. Ack!

I posted last week that I was feeling rather uninspired, and this week is much the same. I really *want* to be trying some new recipes. But, for whatever reason, I don’t seem to work them into my menu. I keep going back to those recipes that are “tried and true” for me. It’s that time of the week again! Thanks to Laura over at OrgJunkie for hosting this every week. There’s a whole host of ladies who participate every week, so click on Laura’s link and check out some of the other menu offerings. A lot of them are probably more tasty than mine 🙂

Before I get to the menu, I wanted to update on the new recipe I tried last week. It’s for a Crockpot Chicken Spaghetti, and it was incredibly easy and pretty good too. Tim wasn’t thrilled with it, but I think it’s more because he had gone out to eat lunch with his buddies from work at an all-you-can-eat pizza place, so when I had chicken with red sauce and spaghetti for supper, he didn’t get all excited. 🙂 I thought it was good though, and it makes a lot. Too much for us really, but it was good.

OK, on to this week:

Sunday – Breakfast for supper; we had Crispy Ginger Ale Waffles, deer sausage

Monday – All on the grill – Chicken (Tim) / Salmon (Stacy), grilled asparagus, grilled red potatoes

It’s that time of the week again! Thanks to Laura over at OrgJunkie for hosting this every week. You can check out her site for a list of everyone playing and their menus 🙂

First off, an update on a couple of new-to-me recipes from last week. Thursday night, I made the Creamy Salmon Chowder that my sister Gail has made and liked. We liked it too, but I don’t think I’ll make it all that often. Tim is not that fond of fish and he likes his food, soups included, to have meat in them. I wasn’t able to convince him that salmon is meat. It’s fish, he says, fish. 😀

The chicken-olive calzones were a really big hit, though! I was supposed to make them on Friday, but we went out on a date and pigged out on ribs, so we had the calzones on Saturday night. They were really good. I’ve just entered the recipe here on our family website. I’ll definitely make these again, Tim loved them!

Now, on to this week’s menu:

Monday – A meal for my sweetie – Ham, black-eyed peas, turnip greens and cornbread (I’ll eat ham, cornbread and probably make myself a fruit salad).

Tuesday Easy Texas chili, leftover cornbread

Wednesday – Light night before Tim weighs in – Grilled Chicken Salad

Thursday – new recipe for Crockpot Chicken Spaghetti (saw it a few weeks ago over on Annie‘s blog, looks yummy!), homemade sourdough bread

Here’s the basic plan for our week…. lots and lots of chicken!
