Menu Planning Monday

Gosh, seems like it was just a day or so ago that I was planning the menu and posting it. Sigh, it’s been a whole week! Be sure to head on over to Laura’s blog, OrgJunkie, for lots more menu ideas and even recipes. Thanks to Laura for hosting this every week!

Here’s what I’m looking at… as always, this is subject to change during the course of the week 🙄

Sunday – we had General Tso’ chicken (from the freezer), brown rice, and potstickers (from the freezer)

Monday – Imitation Crab Cakes, smashed potatoes, green beans or other veggie

Tuesday – Tacos, fat free refried beans

Wednesday – Egg McMuffins, turkey bacon

Thursday – Jambalaya with turkey sausage

Friday – Date Night or pizza

Sat/Sun – TBD

Here’s what I’m looking at… as always, this is subject to change during the course of the week 🙄

Sunday – we had Chinese take-out, yummy!

Monday – Pork Chops in the crockpot (with that wonderful stand-by, low-fat cream of mushroom soup all over them!), butterbeans, rice or salad

Tuesday – Crockpot BBQ chicken, baked beans, mashed potatoes

Wednesday Crispy Ginger Ale waffles, turkey bacon

Thursday – Valentines Day… Tim will grill us a steak and we’ll have baked potato and salad most likely 🙂

Friday – Tacos or maybe Black Bean Chili with cornbread. Then again, it could be a date night!

Saturday-Sunday – TBD

Here’s what I’m looking at… as always, this is subject to change during the course of the week 🙂 I’m going to be busy towards the end of the week and the weekend, getting ready for our Super Bowl party on Sunday.

Monday – Grilled Chicken (Tim)/Grilled Salmon (Stacy), veggie, mashed potatoes

Tuesday – Maple BBQ Chicken Sandwiches, steamed broccoli, salad

Wednesday – Tomato Soup and Grilled Cheese sandwiches

Thursday – Sloppy Joes, oven fries

Friday – Cheeseburger Soup

Saturday – eat out probably

Sunday – Super Bowl party – Hamburgers, Ribs, Wings, Li’l Smokies, Cheesesticks with Marinara, dips and chips, etc

Well, it’s that time again. I haven’t had a lot of chances lately to participate, but I’m going to give it my best shot this week. I really want and need to get back on a schedule. I really want for us to start back on our walking, but we haven’t been able to do that lately because of several things (weather, Tim’s sore knee, business trips, holidays, etc). Hopefully we can get on a better eating plan first.

Tuesday Crockpot Creamy Italian chicken over wheat pasta, steamed mixed veggies

Wednesday – Waffles, turkey bacon

Thursday – Panko Chicken Strips, mac and cheese, broccoli or green beans

Friday – probably Date Night

Sat/Sunday – TBD

Menu Plan Monday

Menu Planning Monday

Well, I’m not totally prepared for the menu this week, but I really *want* to be! I am ready to try to get back to normal. Back to a normal routine, especially where our eating is concerned. As most people do, we’ve really over done it in the food category this holiday season. I have been too scared to go near the scales in our bathroom, but I sure feel like I’ve gained 6 or 8 pounds. Ugh. 🙁

This is still a work in progress, but here’s a general idea:

Sunday – yesterday, we had Pigs in a Blanket for the football games, and then ham and cheese omelettes and biscuits for supper

Monday – New Years Eve….still trying to decide! I have some shrimp and nibbles or we might do Chinese food

Tuesday – New Years Day – black-eyed peas, cabbage, cornbread

Wednesday – it’s supposed to be cold here, so some kind of soup. If I make it to the store to get potatoes, I’ll probably make this Sausage-Corn Chowder. If not, I will probably make chili, since I already have all the ingredients on hand

Thursday – hoping to try a new recipe for Cheeseburger Pasta, butterbeans, another veggie

Friday – Date Night or TBD

Menu Plan Monday

Menu Planning Monday

Well, I didn’t really have a set menu last week, and it sort of bugs me. I still cook a lot, but with the busy holiday season, we are eating out more, and eating worse. Lots of junk food, sweets, etc. Ugh. My waistline is ready for the new year! 🙂

I’ve got a general idea for the week. The middle days are not set, but I have ideas for each day, if that makes sense! Be sure to check out Laura’s blog over at OrgJunkie for lots more menu ideas and even recipes!

Monday – Grilled Chicken (Tim) / Grilled Salmon (Stacy), rice, peas or butterbeans

Tuesday, Wednesday, Thursday.… not sure which one which day:

Spaghetti & Meatballs, broccoli
Panko Chicken Strips, Mac n Cheese, green beans
Waffles & Turkey Bacon

Friday – probably eat out; Date Night

Saturday – lunch will be PapaJohn’s pizza ordered in, while we watch our alma mater play in the Papa John’s Bowl (USM) on ESPN

Menu Planning Monday

Last week’s menu didn’t quite go according to plan. We ended up eating out a lot more than I had planned. So, I’ll try to move a couple of the meals to this week, as “carryover meals”. 🙂 We did end up eating over half of the items that I had planned last week, just not on the day I planned them. So, I thought I would try something different this week – instead of planning by day, I’ll just try to plan a few meals.

Sunday – we had the steaks, baked potatoes and salad that we were supposed to have last week 🙂

Monday – I’m thinking some kind of soup, but my choices are limited. I ran out of potatoes and sweet potatoes. (Yes, I know, I could run to the grocery store, but I just don’t feel like it!!!). So I might either make this chili or maybe this chicken noodle soup

Rest of the week:

Beef Stroganoff, wheat noodles, green beans or peas
Seasoned White Beans with ham or turkey, peas, cornbread
Tomato Soup and Grilled Cheese (carryover meal from last week; always a good standby in our house!)
Sweet and Sour Chicken, Potstickers, egg rolls

As always, the weekend is up in the air. I need to just totally give up on trying to plan food for the weekend 🙄

Menu Planning Monday

Well, we survived the eating and cooking free-for-all that was Thanksgiving last week! I think I’ve gained 10 pounds. I’m too afraid to step on the scales and see 🙂 We haven’t been walking as much either, so that is not helping. I’m hoping we can get back on track a little this week. Which won’t be that easy, since Tim’s birthday is this week!

Last week, we had Thanksgiving at our house and the turkey came out pretty good. We had enough left for sandwiches, and I used the carcass to make a new soup recipe over the weekend. I haven’t entered it on our website yet, but I will try to do that later with my notes. The recipe I used was this one at AllRecipes. Tonight, I’m hoping to use up the last of the turkey (gosh, I hope it is all still ok!) to make a quasi-turkey pot pie.

Here’s the general plan for the week:

Monday – Turkey Pot Pie, baked sweet potatoes

Tuesday Easy Beef Stroganoff, green beans or butterbeans

Wednesday – Light Night before Tim weighs in at work; Tomato Soup and Grilled Cheese or something really light

Thursday – Waffles, turkey bacon

Friday – Steaks, Baked Potatoes, Salad

Saturday – Date Night or pizza or homemade soup if I am home long enough to make some

Sunday – TBD

Well, I don’t know why, but I’m having trouble coming up with a menu this week. I like to have a plan, but I don’t seem to be able to come up with a very good one. And with the upcoming “busy” season (more football, deer hunting season starts, birthdays, Thanksgiving and Christmas), I do imagine it’s just going to get worse! 🙂

Sunday – not sure… some kind of football food, probably wings!

We stayed pretty much on schedule last week. The weekends are so hard, and this past weekend was no exception. We just tend to get busy and eat out a lot. I’m not really sure about this week… for some reason I don’t seem to be able to come up with a lot of meals that appeal to me right now. Here’s the general plan though 🙂

We did good last week, sticking to the menu plan, for every day but Friday. We ended up eating at home, but not what I had planned. Tim wasn’t feeling well, so we just had some souped up ramen noodles. We did eat out a fair amount over the weekend though. Seems like we end up doing that almost every weekend! Oh, and the one new recipe I tried last week worked pretty well. We both liked it. Didn’t love it but we did like it 🙂

We’ve been eating out a lot over the last several days. Time to buckle back down and cook us some homemade meals. Don’t get me wrong, I love eating out and picking up food. But, boy oh boy, I eat a lot more that way! 🙂

Last week went according to plan. In fact, I even cooked more meals than I had planned. We skipped “Date Night” and I cooked (or at least fixed food, football food), all weekend. This week is going to be a lot easier – lots of eating out and a sandwich night! Not very exciting, but nice for me to not cook as much 🙂

last Friday – we skipped “Date Night” – I fixed Shrimp Fried Rice, Potstickers and Eggrolls

last Saturday – we didn’t go out of town, and our alma mater played football Saturday night on TV – we had cheese sticks and “Pigs in a Blanket” 🙂

Sunday – more football food – this time Wings

Monday – Tacos, refried beans

Tuesday Grilled Pineapple Chicken, Grilled Pineapple, Pan Roasted Potatoes

Wednesday – Sandwich Night

Thursday – hopefully dinner out at PF Chang’s (our new one opened a few weeks ago and we haven’t been!)

Friday – hopefully Date Night, if I get to pick, I want to go to my favorite Italian place

Saturday – TBD, may be out of town

Sunday – TBD, football food of some kind

Last week went according to plan. We ate at a new pizza place last Friday on “date night” and it was really good pizza. We’ll have to find another new place to try this weekend. I’m not feeling very motivated on planning or cooking this week. Not sure if I’ll stick to this or not, but it’s a plan to work from.

Last week went pretty much according to plan. I made everything on my menu that I had planned, except for the beef stew (which was a stand-by meal, anyway. I want it to cool off a little more before I make some stew). We stayed really busy all week with football and golf, and then the German festival yesterday. I hope we can stick to plan this week too!
