Menu Plan Monday

Menu Planning Monday

I really enjoyed this last week, so I’m going to try it again this week… and also do a little updating from last week’s menu plan, which I posted here. We ended up eating out less over the weekend than usual, and I cooked a bit more 🙂

Here’s the plan for this week, and an update to last week is on the extended page (just click the Read more button):

Monday – Turkey Burgers, homemade coleslaw, oven fries

Tuesday – Grilled Chicken (Tim)/Grilled Salmon (me), baked sweet potatoes, veggie (maybe sugar snap peas)

Wednesday – tomato soup and cheese toast

Thursday – Spaghetti, Broccoli, homemade bread

Friday – Date Night

Saturday – Out of town; eat out

Sunday – TBD

An update from last week’s menu…

We did have the Maple BBQ Chicken Sandwiches on Tuesday, along with roasted sweet potatoes, corn and steamed broccoli and cauliflower.

Thursday‘s box entree of Annie’s Organic cheeseburger macaroni was pretty good, and hopefully, a wee bit healthier for us than the old Hamburger Helper version. It’s one of my husband’s most favorites, but I hate using box mixes and things with so much preservatives. I’m trying to cook more healthy and less preservatives, trans-fats, etc.

Friday was Date Night. We ate out at a local Mexican place. Tim had the chicken fajita quesadilla and I had the grilled shrimp enchiladas

Saturday we had the frozen pizza I had in the freezer for lunch. It’s a Tombstone and Tim wants to try another brand next time (even though I like these just fine). Does anyone have one to recommend?

Saturday night was heaven – we grilled out ribs, Grilled Pineapple, potato salad and baked beans. We had enough left for our supper Sunday night. Yummy!

    Hello! I’m glad to see someone else doing tomato soup for dinner! I must say the black bottom banana bars look so yummy. I’m not a baker but sure would like to be. Oh and for frozen pizza we like McCain Crescendo. Have a great day! Laura

    I missed doing this one! lol Mmm! I miss having grilled pineapple! Good thing Im having dinner right now or Id be salivating again! lol

    Tim is eating a turkey burger? And he won’t eat salmon? Using a special recipe? I’ve got a couple I think.
    I guess I have to cook now that vacation is over!

    We eat the Red Baron frozen pizzas. To be honest I’m not sure which I like best, but these seem to be pretty good.

    Stacy, how do you make your turkey burgers? Mine never have much flavor to them! Got any tips for me? I use ground turkey breast a lot…for spaghetti, tacos, chili.

    I like this meme. I may have a go at it myself next week.

    Stacy, We eat whatever frozen pizza is on sale, but if I remember right, we think Jack’s are pretty decent. Also, Freschetta makes brick oven pizza’s that are awesome (for frozen pizza). They are a little more expensive, but so good! I’ll be posting the recipes you commented about on my blog sometime soon. Stop by again!

    Oh, I love baked sweet potatoes! I prefer mine savory, with salt and butter, rather than sweet. And we had grilled cheese and tomato soup today for lunch. It’s my favorite version of ‘comfort food.’

    Let me think if I can recall….

    Sunday: Broccoli Farafelle (sp?), spinach salad and brownies

    Monday: Free day (we were at Kennywood)

    Tuesday: Chicken parm (I haven’t decided if I’m making sandwiches or pasta)

    Wednesday: Probably the rest of the burgers

    Thursday: I don’t know

    Friday: Free day (Loki has a show and I’ll probably do laundry at his parents house. Our dryer is broken.)

    I meant to tell you mine yesterday b/c I actually made a plan this week! for shopping purposes yesterday; but subject to change!
    Monday: salmon, pasta salad, sauteed veggies
    Tuesday: chicken chili, salad
    Wednesday: church supper
    Thursday: tilapia & other undecided sides
    Friday: taco salad
    Sat & Sunday: up in the air! but I also bought stuff for crabcakes
