Menu Plan Monday

I ran across Org Junkie’s blog and post last week and saw that there was a new meme starting up revolving around menu planning. Yippee! I have been doing menu plans for quite a while now, and have been posting them over in the forums on our main website, Hambones.org. I have been a bit lax with posting them lately, mostly because I don’t think anyone looks at them. They help me tremendously though, both for grocery shopping, reducing stress, knowing what meat I need to take out to thaw, etc, on a daily basis.

So, this week, I’m going to start participating in this meme on Mondays. I’ll post my menu, some items with links to the recipes on our main site, and some will have “TBD” – to be determined. We tend to eat out on the weekends a lot. We like to have date night!

Anyhoo, here we go, first time to do Menu Planning Monday:

Menu Planning Monday

Monday – Grilled Chicken Salad, with Maple-Mustard dressing

Tuesday – Toss up. The hubby is going to try to play golf with a friend. If he does, I’ll make Maple BBQ Chicken Sandwiches, veggie, probably chips or fries. If he doesn’t play golf, he’s going to get to grill out. 😆 Chicken for him, salmon for me, baked sweet potatoes, veggie or salad.

Wednesday – breakfast food (probably eggs, oatmeal, toast)

Thursday – something new – Annie’s Organic cheeseburger macaroni, corn, homemade bread

Friday – Date Night (eat out) or Frozen Pizza

Saturday – Frozen Pizza or Date Night 🙂

Sunday – TBD

P.S. I’m also on the hunt for a homemade spaghetti sauce, preferably a crockpot one. If anyone has a recipe they’ve used and liked, I’d love to see it. I have been using a jarred Prego sauce, which we like, but I’d like to try a homemade one.

    I’ll have to try your Maple Chicken Sandwiches. They sound great! To answer your question, the Parmesan Chicken Burgers use up leftover Parmesan chicken that I made last week. Cook once, eat twice 🙂 The chicken is breaded and topped with Mozzarella cheese and served with spaghetti sauce. Yummy!

    Hey! Loki and I do this! In an effort to lose weight and not go out to eat so much we decided to plan our meals in advance!

    Here’s our menu for this week:

    Yesterday: Cowboy spaghetti

    Monday: Turkey burgers

    Tuesday: Sauteed chicken breasts in balsamic vinegar sauce

    Wednesday: Broccoli farfelle

    Thursday: Pasta with pompodoro sauce

    Friday: Salsa soup with chicken

    Saturday/Sunday: free days

    This looks great – I’ve thought about needing to do better planning my menus but maybe I’ll just piggyback on yours! Just kidding but some good ideas here.

    RE: spaghetti sauce. My husband actually just likes canned Contadina tomato sauce if you can believe that. I can’t do that, so I”ve been sauteing mushrooms, onions & garlic (or whatever) in a bit of olive oil and then adding crushed tomatoes. It has that smoother consistency he likes but more flavor for me. Sometimes I add wine or herbs – whatever I’m in the mood for – to my portion 🙂 Hey, he eats whole wheat pasta now so I can’t complain.

    Reading about all that delicious food is making me hungry!
    Ive been using jarred spaghetti sauce called Dolmio, but tried this recipe from Annabelle Karmel’s recipe book and it was quite good!
    That new meme sounds quite good!

    What a wonderful idea. That Maple BBQ Chicken Sandwich sounds wonderful. Chicken is my favorite to cook with. I’ll see if I can find my recipe for spaghetti sauce and send it to you. It’s a hand me down from my first husband’s family. They were old world Italian. Cheers.

    Glad I’m not the only one having breakfast for supper 🙂 We have eggs for dinner at least once a week.. and it’s my kid’s favourite meal!

    mmmmm…..both of your monday options sound yummy!! you’re so good, planning TWO meals “just in case” hubby golfs! LOL!!! My husband is the only one who grills also…..in the summer I like grilling a lot but have to check with his schedule first.

    Every time I try to make a menu for the week, it never works. Only one that I will have to say I’m determined to make sure happens is Friday–we go out to eat.

    We’re still working on getting to the store regularly and eating at home for dinner during the week. So far so good… maybe one day we’ll move up to actually thinking ahead about meals. 🙂

    I had just typed this up for a friend, so when I saw your plea for a crockpot spaghetti sauce I could easily send it!! It is very good. I have never tried changing any portion of it, so if you do that you are on your own!!!
    Hope you like it, Diana (alas, I have no blog!)

    CROCKPOT SPAGHETTI SAUCE

    Break up 1 1/2 lb.. ground beef
    4 cloves garlic
    Large onion
    Green pepper
    1 rib celery
    Fresh mushrooms
    2 teas. Italian Seasoning
    2 large cans tomatoes
    12 oz can tomato paste
    Parsley
    1/2 cup sugar
    1/2 cup red wine vinegar
    Salt and pepper
    Chop all vegetables.
    Put everything in crockpot and mix.
    Cook 6-8 hours. (Can take lid off the last 2 hours if desired)
