I’m still not feeling like doing a whole lot of cooking these days. I think it must be the summer doldrums, or else our lovely August heat. Still keeping it pretty simple. 🙂 I’m also going to try to work in a night to have leftovers. I’ve been throwing food out at the end of the week lately, because I’ve been cooking every night, and we usually have food left. If we don’t eat it for lunch the next day, it usually doesn’t get eaten. And I hate throwing food out, so I’m going to see about a “leftovers” night. As always, thanks to Laura, for hosting this every week!
Monday – Chili Cheese-Black Bean enchiladas, pinto beans, guacamole and chips
Tuesday – Crockpot Creamy Italian Chicken, fettucine, steamed mixed vegetables
Wednesday – Breakfast Burritoes with hash browns, oatmeal
Thursday – Sandwich night or leftovers
Friday – Date Night: Eat out or pizza
Saturday – family get together; haven’t decided what I’m taking yet
Don’t think I’m gonna plan anything this week!

I’m doing 2 sandwiches nights……I hate heating the stove up in the summer. You should do that as a question of the say…..how many people cook during the dog days of summer…..take a poll…have a good Monday!

I made enchiladas for the first time the other night and they were really good! I was surprised! I can’t believe I’ve never made them before. I’ll have to try your recipe for them next time.

I’m sure I’ll eat good as well this week, but will probably eat unhealthy in Vegas. It’s vacation so that’s how I’m justifying it.
It’s hot here too. Easy sounds good. The crockpot chicken sounds good. I’m leaving Thurs. to go to Philly until Sat. eve. so I should probably toss something in the crockpot for Mike.
Oh my!! Those enchiladas look good, as does the Italian chicken… I love crock pot meals and have been looking for some good ones to eat in the summer, since a lot of the ones I make are soups and stews. I just might have to try this next week! Yum…
Thanks for the 2 new recipes. Just printed them out. I love black beans, but don’t have many recipes using them. I make a similar crock-pot chicken using liquid Italian dressing and apricot or peach preserves with no soup. Your listing of breakfast burritoes made me want some. I think tomorrow morning I’ll fix those for my group. Ohhhh, with tomatoes right from my garden – they are sounding better all the time.
