Menu Planning Monday

It’s that time of the week again, to post our menus and check out the other ones at OrgJunkie ‘s blog. My menu is going to be really up in the air this week, with the Thanksgiving holiday, and the fact that my husband wants to go hunting, but he’s not sure when and which days. Hunting season always throws a kink in my menu planning 🙂

Here’s the general idea for the week, but a lot of these may not make it on the table this week and will be pushed to next week.

Monday – new recipe for a Crockpot Butternut Squash soup, salad, bread

Tuesday – Chicken Soft Tacos (using this recipe for doing the meat in the crockpot), refried beans

Wednesday – this may or may not happen! I have to make my Broccoli Casserole to take to our family get-together, and my dad may or may not be here. Anyway, the plan is to make Golden Potato Soup for supper

Thursday – Thanksgiving get-together with my husband’s extended family. Probably 60-80 people will be there!

Friday – not sure, if hunting is involved, I probably won’t be here to cook. Otherwise, I’ll make Taco Soup

Saturday – TBD / Spaghetti

Sunday – Game Day food – buffalo wings, blue cheese dip, chips and dip

    I had wanted to make a butternut squash soup last week with my squash but made cheeseburger soup instead! So I roasted the butternut yesterday; can’t wait to hear how this one turns out.
    I don’t think we are having broccoli casserole forThanksgiving….gasp! Shhh, don’t tell the kids, I don’t think they realize it yet!

    p.s. I DID make the mini meatloaves last week! They were super good! My dh ate the rest of them the next day …. COLD! lol I made them with Tammy’s parmesan/garlic egg noodles and green beans on the side and it was a really good meal I will be making again!

    Monday: leftovers

    Tuesday: fish with mushrooms

    Wednesday: chicken and rice

    Thursday: Thanksgiving

    Friday: more leftovers

    Saturday: leftovers

    Sunday: did I mention leftovers? 🙂

    ummmm p.s.s. (lol)

    I adapt the beef and noodles recipe that I posted on my menu for my crockpot! You know, I didn’t realize until I made it again today that it was written for a pot on the stove!

    I put the beef, onion, steak sauce, mushrooms, onion soup mix all in the crockpot all day on low and cook the noodles separately. At the very end I mix the noodles in before serving, but you could serve it on top too. Use the noodles that she suggested though — they are sooooo good! I do not brown the meat first, but I am sure that would be good too.

    My mother has a huge family too. We haven’t gotten everyone together in forever. We are hoping to next year for Christmas. Have a great Thanksgiving!
