OK, I really don’t have a lot to contribute this week. My husband has to be out of town on business for an undetermined number of days. When he’s not here, I don’t really cook. I’ll eat cereal or oatmeal, or maybe a can of soup, or if I get really industrious, I might microwave me a frozen eggroll!!! 🙄
Monday – Crockpot Chicken Santa Fe over tortilla chips. Yes, I’ve had this on the menu a lot. It’s a favorite go-to meal that I can throw together quickly and easily. But I haven’t made it in a long time, it is always one of those things on the menu that slides. 🙂
Tuesday – Free Night
Wednesday – Free Night
Thursday – TBD… either Free Night, or if Tim gets back from his trip, we’ll probably have spaghetti and meatballs and homemade bread
Friday – TBD … either Free Night, or if Tim is home, we may go out for date night
Sat/Sun – I’m not even going to try to plan. We have ended up eating out a lot on the weekends lately. I’d prefer to be home and cook, but Tim loves to go, go, go and eat out. If we are here, I might make the Taco Soup that I didn’t get to this past weekend
Well you know I make the Chicken Santa Fe a LOT as well! A favorite around here also, and so easy for me to do on Sunday mornings. We are to blame for some of your eating out on the weekends……if we didn’t come to see you so much maybe you could stay home & cook!
I love my taco soup recipe, it might be slightly different than yours. I’ll have to post it sometime.
I really need to try that crockpot chicken Sante Fe recipe…I’ve had it on my menu before but I never actually fix it! lol!!
Hehe. When K isn’t at home, I don’t eat very much at all. In fact, I’m usually not interested in eating. It’s more like before I was married when I just didn’t care to eat most of the time. 😉
I totally want to try both the taco soup and the chicken santa fe! I wish I could remember from week to week when I am making my menu plan how delicious everyone else’s menus sound!

Your menu sounds….pretty much like mine would be if hubby was gone…we would have cereal, oatmeal, or soup…….and loved reading your meme…I always love reading about people….happy halloween

About those meatballs………
I too used to use the bagged ones until just this past year when I found out how easy they are to make! You should try it. I still use bagged ones when I make Swedish meatballs, because they hold up better in the crockpot and I love the slow-cooked taste w/ that recipe.
