I love planning menus, even though I don’t always stick to them 100%. Mine often have things rolled over from the previous week, and have to stay flexible on the weekends. We sometimes eat out a lot on the weekends, so you’ll often see TBD (to be determined!).
Here we go:
Sunday– tacos, refried beans for lunch. We splurged and had a big breakfast for supper – eggs, cheesy hash browns, turkey bacon and biscuits
Monday – grilled turkey cutlets, garlic smashed potatoes, sesame green beans
Tuesday – Easy Baked Fish (using tilapia), baked sweet potatoes, mixed veggies with cheese (frozen bag I’m trying to use up)
Wednesday – Light Night (my husband weighs in at work with his weight loss group on Thursday mornings) – either soup and sandwich or eggs, oatmeal and toast
Thursday – Stroganoff over yolk-free noodles, butter peas, homemade bread
Friday – Date Night probably 😀
Saturday/Sunday – TBD
Monday – Labor Day, not sure yet
I think we’ll have this:
Monday….salmon b/c Don can’t get fish at the Crystal grill on mondays!
Tuesday…herbed turkey breast
Wed……church supper & our class’s turn to serve!
Thurs…..mexican salad (dodie’s recipe)
Friday….chicken pot pie maybe
unless we go somewhere for the weekend!
and I will probably fix sesame green beans with something b/c I love them so much!

Hello! Thanks for the nice comment about my new site 🙂 Yes that is definitely the great thing about menu planning….it can be totally flexible. I too generally keep the weekends open so if I don’t get to a recipe during the week I just make it on the weekend. Love that you have date night! Laura

Monday: Chicken Sate’ with peanut dipping Sauce
Tuesday: Brown Rice Salad (loki created)
Wednesday: Tuna Noodle Casserole
Thursday: Cowboy spahgetti
Friday: free day
Saturday: Parents will take us out for dinner.

Sounds yummy! I make “soft” menus here; we tend to never stick by them.
The chicken sate’ with peanut dipping sauce was fabulous!!
