Nachos, Anyone?

We had some homemade nachos over the long holiday weekend. They’re probably not as good as the ones we get in sports bars and restaurants, but we certainly liked them well enough. This was supper one night, and between the two of us, we polished off the whole darn thing 😀 I know, I know, there’s not a redeeming thing about these. Loaded with fat and calories; they’re probably more of a “heart attack on a platter”. But, I will say that I used ground turkey for the meat, LOL!

I’m hoping to post more food-related posts soon. I’ve actually made a couple of new recipes in the last month or so that were good, and that I’ll make again. I always go grab my camera and make Tim wait to eat until I can snap some “blog-worthy” photos. Yes, I’m a nerd!

Also, I’m on the lookout for some more new skillet dishes. We’re cranking up into summer here, and I just almost refuse to run my oven. Granted, I only had to turn it on for 10-12 minutes for the nachos, but still, it heated up the kitchen pretty well. When it gets to be summertime, I turn to my cookbooks and online cooking blogs for recipes to make in the crockpot and on the stovetop. I’ve got a couple of new skillet entrees I want to try, but am always on the lookout for more. If you’ve got one you make and like, please let me know!

    Oh Stacy, don’t you know that drooling is not good for one’s keyboard! I’m sure I’m not the only one salivating over those nachos!

    I can’t get over the difference in our climates…just night before last we had a pretty good frost–it was down to 27 degrees.

    YUM! Nachos are my favorite. I had them last night – just me. I take a bunch of the whole grain Tostitos and spread on a paper plate, spoon on some chunky salsa and maybe some olives. Then I sprinkle a bunch of Mexican cheese on the top and microwave for a minute or two. Delish, easy and NO clean up.

    If someone is joining me, I do two things. One, I add refried beans to the nachos. Two, I do a delicious taco skillet dinner. I forget the recipe but I have it at home. You’re supposed to use a taco dinner box. You brown & drain the meat, add taco seasoning & salsa, a small can of corn, crunch up tacos (I use nacho chips instead), spread cheese on top and simmer for a minute or two. It’s SO good.

    Can you tell I love Mexican?!!

    I told you when I sent you the stuff about the nachos that they were good! Really good! Yours look great too and it’s no problem for us to finish off a plate….we’ll pay for it some day I guess.
    I’m thinking you showed the “better” side of that plate, that is, the one with the tomatoes! I’m guessing that other side without them (and not as good) was the side for you. 🙂

    I’ve just posted a recipe on my blog for Tortellini Salad, you only need to use stovetop, and chop a few veggies, no oven involved. I like it, perhaps you will, too.

    Okay, I ate something yummy for dinner. How’s this: a lobster burrito with three kinds of sauce (red chili, green chili, jalapeno cream).

    I have one. It’s from Pampered Chef:

    Skillet Lasagna
    1 jar marinara
    3 c water
    8 oz lasagna noodles, broken into fourths (I use the whole 12 oz box and add more marinara and water)
    1 lb ground turkey
    2 garlic cloves, pressed
    2 oz Parmesan (I use grated)
    2 Tbsp chopped fresh parsley, divided
    1 cup ricotta cheese (use skim or low fat)
    1/2 c shredded mozzarella cheese
    1/4 tsp ground black pepper

    1. Combine sauce and water in 12 inch skillet. Cover, bring to boil.
    2. Stir noodles into sauce. Cover; reduce heat and simmer 16-18 minutes
    3. Meanwhile, brown ground turkey. Drain. Add pressed garlic; cook 1 minute. Stir turkey into noodles and sauce.
    4. Combine cheeses, 1 Tbsp parsley, and black pepper. Scoop cheese mixture onto top of lasagna with a large muffin scoop (about 8 scoops). Cover and simmer 3-5 minutes to melt cheese.
    5. Sprinkle remaining parsley over top to serve.

    I have never made lasagna any other way. It is so good!

    Now I’m craving nachos big time. We do our nachos in the microwave in the summer. Just until the cheese is all melted.

    Those nachos look like heaven on a platter! Yum! After the week I’ve had, I’m thinkin’ nachos and a margarita might be just the thing for Friday’s supper;)

    The nachos look yummy! I’m with you on the oven thing. There’s no need to turn the oven on until winter time is here!!! I heard someone saying yesterday that next Wednesday we should hit 97!!! oh please say it ain’t so. We’ve been doing a lot of grilling. The oven is on vacation 🙂

    YUM! Nachos is a favorite around here–especially as an easy Sunday night dinner. I am back to weight watchers again, so I have to modify my plate of nachos and they are not nearly as good looking as yours!
