QOTD – What’s For Lunch?

What's For Lunch?Last week, Heidi from God’s Grace in Practice, left a comment on my Friday Feast post about a great idea for a question of the day. It’s one that I’ve been meaning to ask myself, and would love to get a lot of answers and feedback on. Thanks so much Heidi! πŸ˜€

So, that’s today’s Question of the Day: What do you usually have for lunch? Do you eat lunch at work, at your desk, eat out, eat at home, eat lunch on the run, or skip lunch altogether? For those of you at home, what do you usually have? Do you plan your lunches, or just try to grab something? Do you eat leftovers from last night’s supper, or do you just slap together a sandwich?

Here’s my really long-winded answer! As for us, we eat lunch at home most days, now that Tim works primarily from home. He goes out to eat with co-workers one or two days a week, and often on the weekend, we’ll grab a sandwich or burger while we are out. That leaves 3-4 days a week where we’re foraging at lunch for something to eat. I try to plan meals during the week that will leave us leftovers for lunch the next day. Leftovers probably comprise about half of our lunches at home. Tim is really good about heating most stuff back up and eating it the next day. Sometimes we don’t have food left, or sometimes it is not something that heats up well, so for those times, we often have sandwiches. I try to keep lunch meat on hand (mostly ham and turkey), and we always have a boatload of chips in our house (Tim is a potato chip fanatic). I often make chicken salad or tuna salad for sandwiches for both of us (and I’ll make egg salad and salmon salad for me, but Tim won’t eat those). I keep Morningstar and Boca products in my freezer for quick lunches. We both really like the Morningstar corn dogs and I like the patties for sandwiches (chicken patties and burgers). I have on my menu soon to do turkey hot dogs with turkey chili for Tim, as he loves that kind of stuff. We also sometimes have wraps or roll-ups, if I have extra tortillas left from a suppertime meal. I try to eat fairly healthy, and often with leftovers or a sandwich, I will try to eat yogurt or fruit instead of chips with my meal. Getting Tim to eat yogurt is not ever going to happen in a million years, and fruit is a close second. He’ll eat some fruit about once every 2-3 months. πŸ™‚

    Hi there. Just found your blog today via another blog I read.

    I’m so lunch challenged. I don’t mind making breakfast or dinner, but making lunch is somthing I just can’t seem to enjoy no matter how hard I try.

    The summer is especially challenging. We do lots of sandwiches.

    But during the school year when I only have to worry about feeding myself, these are a few things I enjoy:
    leftovers (but usually my husband takes ’em to work!)
    hummus and tortilla chips or ww crackers
    Amy’s Organic burritos from the freezer section (vegetarian chili is my favorite)
    salad–I keep lettuce washed and ready-to-use in the fridge. Then just top with my favorite veggies and salad dressing (try Lily’s balsamic vinaigrette!)
    I also like to make a taco salad with lettuce, fat-free refried beans (warm first), tomatoes, cheese, salsa and a few chips.
    And if I absolutely have no other choices, I’ll eat a sandwich. But I really loathe sandwiches at home.

    Most of the time I skip lunch, for which I get chastised greatly by my husband and children. I think that’s why they love when I have lots of lunch dates with friends. When I go out, I usually have a sandwich and fruit or some sort of veggie soup (in the cooler months) and half a sandwich.

    When I do manage to eat lunch at home, it’s usually leftovers from the night before. Sometimes it’s a bowl of cereal or a cup of yogurt with granola and some fruit, especially if I haven’t eaten breakfast.

    Thanks for asking this question Stace!

    We also sometimes have leftovers, but my husband almost always takes them to work. Which I actually don’t mind because I get tired of leftovers quickly.

    Obviously, as a SAHM I eat at home usually, although sometimes playgroup goes out to fast food for an outing or over to someone’s house. Usually when we eat at someone’s house we have really healthy food, and I’d like to try to find a way to eat that way every day!

    Wow…you guys really do vary up your lunches pretty well. We seem to stick to the same old things. Sandwiches, BLTs, grilled cheese, mac & cheese, soup, bagel sandwiches, etc. Lunch is my least favorite meal of the day.

    More often than not, my lunch is either a salad or a Lean Cuisine meal. Once in a while it’s leftovers from supper the night before. And every once in a GREAT while, I have a Chickado Sandwich — two slices of whole clove garlic bread from Grace Baking, smeared with light mayo, with a baked Morningstar Farms chik pattie (cut in half) on each slice, topped with two slices of avocado, with a little mozzarella cheese sprinkled on top, then it all run under the broiler for a few minutes. It’s delish! πŸ™‚

    I am boring at lunch. Either ham or turkey sandwich with mustard only and some chips, or left overs if we have any. With these boys, lunch has to be predictable and FAST:-)

    The kids have either soup with veggies and dip, turkey sandwiches w/ pickles and olives, mac n cheese, ramen noodles, bean burritos, or sometimes pizza muffins.

    I have leftovers, soup, rice, ramen, or anything easy.

    Today I had leftover grilled chicken wrapped in a tortilla w/ cheddar and taco sauce.

    I’m like you–I try to make dinners the night before that will leave leftovers for lunch the next day. It’s just easier that way with kids at home (all year) and sandwiches do get boring!

    Great question — I’m always bored with lunch! During the school year, when I’m home alone, I usually have a Lean Cusine or a turkey sandwich. Sometimes I’ll get a latte and call it lunch — I know — baaad. When the kids are home, or on weekends, we have tuna or mac & cheese, and sometimes frozen pizza. Lunch is my least favorite meal to fix. Why is that?

    I usually have enough leftovers from dinner for both Jesse and I to take some to work with us. Since there’s just the two of us, there’s usually quite a bit left from dinner, even when I cut recipes in half.
    If we don’t have leftovers, I often make a simple salad. If we have wraps, I’ll make a wrap of some sort, sometimes incorporating our leftovers, depending on how wrappable they are. If all else fails, a sandwich will do, but I hate taking sandwiches to work. BORing! I haven’t let myself splurge on frozen meals this year, although I like some of them and find them really easy to do… but I feel like it’s not something worth splurging on at this point.
    In the fall/winter, I make a lot of soups and stews, so there’s ALWAYS lots of leftovers from those, sometimes enough for multiple lunches. It’s one of my favorite lunch foods, with a piece of crusy homemade bread… yum. As much as I am loving the freshness of summer produce, I think cold weather food is without question my favorite. I can’t wait for fall and soup!! πŸ™‚

    This was a great QOTD! I got some nice new ideas to try, too… I never think to have tuna or salmon sandwiches… and those would be easy to do at work.

    David comes home everyday to eat lunch with me. We usually either have sandwiches or leftovers from dinner the night before. We sit at the table together just like at dinner. Today, however, was a bad day ( I was crying when David called me from work) and he left to come home to give me a hug …. what did he have with him? A lime slush, french fries, and a blt from Sonic! Mmmmm! I sure do love that man … oops, this was supposed to be about lunch, LOL!

    Not a big lunch eater here. I like to eat yougurt with granlola or fruit a lot or a jamba juice for lunch. Sometimes, I forget to eat and it’s like 2pm before I remember.

    Well, we eat leftovers alot for lunch…but if this is not around we do salads and sandwiches….wraps of all types. We eat fruit with everything too. Whether it be fresh or canned. I try to eat out for lunch once a week. Love your questions of the day.

    This week I’m having tomato sandwiches for lunch, yummy! You’re tomato challenged so that wouldn’t work for you. πŸ™‚
    If D is here at lunch he likes to go out AND have a big dinner too which I can’t do every day. Sometimes we eat leftovers or I do if he’s not here….or I’ll eat fruit, veggie and yogurt or something like that. It’s just usually whatever I can find and feel like fooling with if I’m here by myself. Or a pimento cheese sandwich b/c you told me about that stuff!
    I like the morningstar chicken or boca patties but haven’t tried the corn dogs yet!

    My answer is a little bit of everything. All 3 of us eat lunch here every day, but not necessarily together (Philip sometimes works through lunch & eats later).
    If we have leftovers, then we have those. Sometimes it’s a sandwich. Sometimes it’s wraps, or salad, or mac n cheese, or something from a can, or pasta with sauce, or eggs, or, if we’re really hungry & in a hurry, we’ll all share a pizza (I love those days!). I will also have a Lean Cuisine or Healthy Choice frozen meal fairly often.
    I can’t think of anything else! It just totally varies according to what we already have handy, or what I feel like fixing.
    G would be happy with a peanut butter sandwich every single day! He thinks those are the best lunches in the world! (I do too, b/c they’re EASY!)

    I eat lunch unless I’m unable b/c of clinic running overtime and another thing starting right away. I like soup, especially in the winter, salad (I usually do spinach, mushrooms, some kind of fruit, tomato, and turkey or bacon), or a whole wheat pita pocket half with hummus, spinach, roasted red bell pepper, turkey, and feta cheese with a peach or apple. That’s my new discovery!

    I love turkey with hummus! I could also eat pb and j every day. My boys and I also love green apple slices with peanut butter.
