I don’t know about anyone else, but normally I actually usually love to cook and bake. But, this summer, I’ve really been avoiding it like the plague! Maybe it’s the weather, maybe it’s the so-called summer doldrums, maybe I’m just reacting to our busy lives and the fact that we’re eating out more and eating much later at night, which I really hate. Whatever it is, I really haven’t been cooking much lately. And when I do cook, I make something easy, like taco salad or spaghetti or fish with veggies. Nothing fancy and certainly nothing new lately. I haven’t made a new recipe in ages – until last night.
I made a new recipe for banana-blueberry muffins and they were really good! We decided to just have breakfast food last night for supper, and we cooked some of Tim’s deer sausage. We’re nearly out of most of the meat from hunting season last year, but we do have a little bit of sausage left. So we had eggs and sausage, and instead of biscuits or toast, I made muffins instead. They are fairly healthy, as far as muffins go, and they were pretty tasty too.

I think it’s funny what you consider “easy”. I looked at that recipe and I don’t even know what half of it means. For us, spaghetti is pretty serious cooking.

I’ve been doing the same thing, Stacy…cooking whatever’s the quickest and most convenient – even on the weekends when I actually DO have the time to cook up something special. I’m just too tired after work to come up with anything original and I’m plain lazy on the weekends ;~)

Yum. I usually do like to add whole wheat flour to my blueberry muffins but this recipe looks even better. I’ll have to try it. If I was up on my blog-reading, I could have made these to take to our SS class today . . . hmmm. That’s what I get!
The muffins look delicious! I am not sure if you can use the same excuse as me, but frankly I hate to heat up the house by using the oven during the hottest part of the summer. hahaha So we tend to grill (since the heat is outside instead of in my kitchen) or we go out to eat, with a BOGO coupon of course! 🙂
