If you want something that tastes like it came from the Chinese Buffet, this is it! I made this last week and Mark and I really liked it. I had to modify the recipe a little on the directions, but it still cooks really quick.

Ingredients:

1 tbsp vegetable oil
1 lb pork tenderloin, cut into 1/2 inch slices
1 pkg (16 oz) frozen broccoli, cauliflower and carrots
3 tbsp apricot preserves 
1 tbsp hoisin sauce
Hot cooked rice or noodles 
Directions:
  1. Stir-fry pork for 4-5 min or until no longer pink. Remove from pan.

  2. Stir-fry veggies.

  3. Add pork back to the mixture. Stir in preserves and hoisin sauce until warm.

  4. Serve over rice or noodles.

  5. Amanda's Notes: You might want to add a little extra preserves and hoisin sauce to make a little more of the sauce to pour over rice or noodles.
