Ingredients:
2 cups cooked squash
2 cups cornbread crumbs
2 eggs
1 stick margarine
1/4 cup chopped onion
1 can cream of chicken soup -- undiluted
Directions:
Saute onion in margarine. Add squash, bread crumbs, eggs and soup. Salt and pepper to taste. Put in 2 quart slightly greased casserole dish.
Bake at 350 degrees, uncovered, until it is slightly brown, about 30 minutes.
Serves 8-10.

2012...when I made this for Thanksgiving I used a package of Jiffy cornbread, baked & crumbled, 3 cans of squash well blended in blender and then also added about a cup of crumbs from a package of Pepperidge farms herb stuffing mix. Also had some leftover chicken broth in fridge and think I added a bit of it! This seems to always turn out good!
