Description: Adapted from a recipe at AllRecipes.com. Other than the pan fried panko chicken tenders, this is my favorite way to do chicken strips.

2 tablespoons olive oil
1 clove garlic, minced
1 cup dry bread crumbs
⅔ cup grated Parmesan cheese
1 teaspoon dried basil leaves
? teaspoon ground black pepper
6 skinless, boneless chicken breast halves
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
In a bowl, blend the olive oil and garlic. In a separate bowl, mix the bread crumbs, Parmesan cheese, basil, and pepper. Dip each chicken breast in the oil mixture, then in the bread crumb mixture.
Arrange the coated chicken breasts in the prepared baking dish, and top with any remaining bread crumb mixture.
Bake 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.
Stacy's Notes: Adapted April 2011, from AllRecipes.com with several changes I usually use 2 chicken breasts for the two of us. I used panko instead of bread crumbs, and cut my chicken into strips or tenders. I used a 3 cheese blend I had on hand (asiago, parmesan and something), as well as basil and pepper. Dip into olive oil and garlic mixture (I use jarred minced garlic), and then into the cheese mixture. Put on greased or foil lined pan and bake for about 18-19 minutes in my oven at 350 degrees. Usually serve with spicy oven fries and another veggie or salad.
