Preheat the oven to 400. In a shallow dish, combine the cheese with the paprika and parsley and season with salt and pepper. Drizzle the fish with olive oil and dredge in the cheese mixture. Place on a foil-lined baking sheet and bake until the fish is opaque in the thickest part, 10 to 12 minutes. Serve the fish with the lemon wedges.
Gail's notes: We loved this! I have another parmesan crusted tilapia I've been making for a couple of years and I've only done this one once but I believe it's probably better. I halved everything for 2 of us...used an Italian blend grated cheese from a bag and dried parsley. I added just a shake of the parmesan from a can and about a teaspoon of bread crumbs. Forgot to put it on foil lined pan and didn't have lemon. I did drizzle it with olive oil again just a bit before it went in the oven.
