about 24 oz. of cheese (I use a combination of
cheese...cheddar, monterey jack mostly)
3-4 oz. softened cream cheese
4 oz. jar pimentos
pepper, maybe salt; I only use small amount if any
garlic powder
mayo

Mix all together and chill...how much easier can it get!
I wasn't very exact on all the amounts because I usually just do this and don't really know how much of anything for sure. I've used already grated cheese and blocks of cheese I grate myself in the food processor. I think it's a matter of opinion on which way you prefer! If I'm using packages of grated cheese I sometimes do 1 of cheddar, 1 of monterey jack and sometimes 1 of sharp cheddar. I think the sharp cheddar is good but it tends to give me headaches so mostly I 2 parts regular and 1 of a blend. I've used cream cheese out of the tub or package, just let it get soft before mixing. I really don't know how much mayo I use, just enough to mix it all together...a couple of big spoonfuls maybe! I guess I should try measuring to see.
In the summer I tend to keep a batch made about every 10 days or so because we love it!
