Ingredients:

1 cup shredded mozzarella cheese
8 oz cream cheese, cubed
1/4 cup grated Parmesan
1 clove garlic, minced
1/4 teaspoon pepper
14 oz can artichokes, drained & chopped in food processor
6-10 oz fresh spinach leaves, chopped in food processor
Directions:
  1. Combine ingredients in slow cooker (1.5 quart or more). Cover and cook on high 2 hours, until hot and bubbly. Stir well and serve with tortilla chips.

  2. Stacy's Notes - really good! Made November 2009 for a football game. I used low fat cream cheese, Kraft parmesan (cheap green container!), jarred minced garlic, artichokes as recipe calls for and fresh spinach, but I probably used about 4-5 ozs in the food processor. Was ready in under 2 hours. Good, but I thought it lacked a bit of flavor, so next time, maybe try a bit more garlic and maybe even a dash or two of red pepper. Still really good!
