Ingredients:

1 jar marinara
3 cups water
8 oz lasagna noodles -- broken into fourths (I use the whole
12 oz box and add more marinara and water)
1 lb ground turkey
2 garlic cloves -- pressed
2 oz Parmesan (I use grated)
2 tablespoons chopped fresh parsley -- divided
1 cup ricotta cheese (use skim or low fat)
1/2 cup shredded mozzarella cheese
1/4 teaspoon ground black pepper
Directions:
  1. Combine sauce and water in 12 inch skillet. Cover, bring to boil.

  2. Stir noodles into sauce. Cover; reduce heat and simmer 16-18 minutes

  3. Meanwhile, brown ground turkey. Drain. Add pressed garlic; cook 1 minute. Stir turkey into noodles and sauce.

  4. Combine cheeses, 1 Tbsp parsley, and black pepper. Scoop cheese mixture onto top of lasagna with a large muffin scoop (about 8 scoops). Cover and simmer 3-5 minutes to melt cheese.

  5. Sprinkle remaining parsley over top to serve.

  6. Stacy's Notes - Made this July 2008, very good! I used one jar of store brand marinara, 1 pound ground sirloin and half the box of lasagna noodles. I used dried parsley and jarred minced garlic. I realized about 2/3 of the way through that I was out of Parmesan cheese, so I didn't add that. It was still really good without, although next time I'll be sure to have it on hand :) This is really good, a keeper!

This turned out good when I fixed it! It can make a lot for 2 so maybe Stacy and I can both remember to try cutting the recipe in half when making again!
