Ingredients:
1 pound ground beef -- see notes
1 - 10.5 oz can cheddar cheese soup
1 - 10.5 oz can beef broth
1 1/2 cups water (see notes)
1/2 cup ketchup
2 cups medium pasta shells or macaroni
Directions:
Brown ground beef and drain. Add all the other ingredients and heat to a boil. Cook over medium heat 10-15 minutes or until done, stirring often.
Stacy's Notes: made for the first time Jan 08. This was really good, and Tim liked it. I was looking for a healthier alterative to Hamburger Helper Cheeseburger Macaroni, which Tim really loves. I used 1 pound of ground turkey, and the cans of cheddar cheese soup and beef broth. I only used about 1 cup of the water, so mine was thicker. I also used whole wheat macaroni. I added some chili powder, garlic powder and other various seasonings for more flavor. This took about 12-15 minutes to thicken,with the lid off, on medium to medium-low to get it to the consistency I was looking for.
Stacy's Notes: Made again a couple of months later, but decided to make a homemade version of the cheddar cheese soup and I used broth made from Better than Bouillon beef base. I used ground sirloin this time, and Ronzoni Smart taste (white not wheat) pasta (2 cups). I used the 1/2 cup of ketchup called for but again used 1 cup or less of water. I added salt, pepper, chili powder, garlic powder and Nature's Made seasoning. Again, really good. A definite keeper.
