1/3 cup all purpose flour
1/4 teaspoon cayenne pepper
10 ounces boneless skinless chicken breast -- cut into
strips
1 tablespoon butter (see note)
2 tablespoons lime juice
2 tablespoons honey
1 tablespoon brown sugar
1 teaspoon Worcestershire sauce
Directions:
In a large resealable plastic bag, combine flour and cayenne. Add chicken, a few strips at a time, and shake to coat. In a skillet, brown chicken in butter on all sides.
Combine the lime juice, honey, brown sugar and Worcestershire sauce in a bowl, stirring till blended; pour over chicken. Cook for 1-2 minutes, or until juices run clear and sauce is thickened.
Stacy's Notes: Made these July 2007; really good! I used 5 chicken tenders for the two of us. I used olive oil to brown the tenders in, rather than butter, but everything else was the same. I used regular store-bought clover honey rather than farmer's market honey (which Gail used, and hers burned). Served the first time with a boxed sesame noodle mix, and stir fried a bag of frozen stir fry veggies. Really good meal; a keeper!
