Gail's Easy Vegetable Rice Stew

Ingredients:

1 Tablespoon oil
12 oz. smoked sausage (I use turkey)
12 oz. frozen onion-bell pepper mix
3-4 cup minced green cabbage
2 cloves minced garlic (about 2 t.)
1 teaspoon thyme
1/4 teaspoon cayenne pepper, optional
1 quart. chicken broth, reduced sodium
2/3 cup white or brown rice
15 oz. can crushed tomatoes


Directions:
  1. Put oil in large saucepan over medium high heat.

  2. Chop sausage into 1/4" pieces; cook & stir in pan until it begins to brown. Add onion-bell pepper mix and stir. Add cabbage, garlic, thyme and cayenne (if using).

  3. Cook about 15 minutes more stirring occasionally or until vegetables are tender and have reduced in size.

  4. Add chicken broth, 1 c. water and rice. When the mixture boils, reduce heat, cover and cook 15 minutes or until rice is tender. Stir in tomatoes, bring to a boil and cook a couple of minutes.

  5. Gail's Notes: You can chop and use one onion and 1-2 bell peppers in place of the frozen if you like. A 1 lb. package of the frozen onion mixture works fine. I use a package of preshredded cabbage from the store. Using brown rice might take a bit longer to cook but adds whole grains to the mix. This is a recipe that you can have ready in a short amount of time for a last minute meal.

  6. Good with garlic bread.

The last time I made this I didn't have rice on hand! So I used one bag of the brown rice boil in bag stuff, success brand...just opened up the bag before cooking, it was right about a cup and added it in. Used petite diced tomatoes which worked but some people might like them more crushed, so could use an immersion blender for that. :)
