1 cup quick grits
1 stick margarine
1 cup shredded sharp cheddar cheese
1 pound (crisp) cooked bacon or sausage
6 eggs
1/2 cup milk
salt to taste
Directions:
Cook grits according to package directions. Add margarine and cheese; cook over low heat until cheese is melted. Cool slightly, stir in 2 beaten eggs. Pour into 2 quart round casserole dish. Crumble bacon and sprinkle over grits, reserve 1/2 cup . Beat 4 eggs with milk. Pour egg mixture over bacon and grits. Season.
Bake in 350 degree over for 50 minutes. Sprinkle with remaining bacon crumbs. Serve hot.
