Ingredients:

3/4 cup butter or margarine -- softened
1 1/2 cups brown sugar
1 teaspoon vanilla
3 eggs
1 cup mashed banana (see notes)
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
6 ounces butterscotch morsels (see notes)
1/2 cup chopped nuts
Directions:
  1. Cream butter or margarine with brown sugar and vanilla. Add eggs, one at a time, beating well after each. Mix in mashed banana. Blend flour, baking powder and salt. Stir in butterscotch morsels and nuts. Spread in a greased 10x15-inch pan.

  2. Bake at 350 F. for 35 minutes. Cool and frost with a powdered sugar icing, if desired.

  3. Stacy's Notes - Made Feb 2006. I used 1 1/2 sticks light butter, 2 medium bananas and about 1 cup of butterscotch morsels. I don't have a 10x15" pan, so I used a regular 9x13. These were good, especially warm right out of the oven. I didn't frost them, but I'm sure they'd be even more delicious with frosting. Tim liked them and said they were a keeper :) Oh, and I baked them 33 minutes in my oven and they came out good (passed the "toothpick test") :)
