Amanda's Parmesan-Dijon Chicken

Ingredients:

3/4 cup dry bread crumbs
1/4 cup grated Parmesan cheese
1/4 cup (1/2 stick) margarine, melted
2 tablespoons Dijon Mustard
6 boneless, skinless chicken breast halves
Directions:
  1. Heat oven to 375 degrees.

  2. Mix bread crumbs and cheese in large plastic bag. Combine margarine and mustard. Dip chicken in margarine mixture. Shake chicken in bag to coat with crumb mixture.

  3. Bake uncovered 20 - 30 minutes, turning once, until juice of chicken is no longer pink.

  4. Amanda's Notes: We tried this in April 2005 and really liked it. The chicken had a really great taste and this recipe was so easy! Mark suggested eating it on a bun as a sandwich. I think that we'll try that next time.

For 2 of us I halved the ingredients and used 2-3 boneless breasts. I combined the crumbs and cheese on a plate instead of a bag; then after I dipped the chicken in the butter/dijon mixture I put them on the plate to coat them instead of shaking! They tasted good and it's pretty easy to do.
