Prep. Time:
Ingredients:

2 cups semisweet chocolate pieces (1 - 12 oz pkg)
1/2 cup margarine
3/4 cup sugar
2 eggs
1 teaspoon vanilla
2 cups Quaker Oats (Quick or Old Fashioned, uncooked)
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup powdered sugar
Directions:
  1. Heat oven to 350ยบ.

  2. In a heavy saucepan over low heat, melt 1 cup chocolate pieces. Stir until smooth; cool slightly. (See Note)

  3. Beat together margarine and sugar until light and fluffy. Blend in eggs, vanilla and melted chocolate. Add combined dry ingredients except powdered sugar; stir in remaining chocolate pieces. Shape dough into 1" balls; roll in powdered sugar, coating heavily.

  4. Place on ungreased cookie sheet; bake 10-12 minutes. Cool one minute on cookie sheet; remove to wire rack.

  5. Store in airtight container; makes about 5 dozen.

  6. NOTE: To microwave, place chocolate pieces in glass container. Microwave on HIGH for 1 to 1 1/2 minutes; stir after 1 minute. Stir until chocolate is melted and smooth.

  7. Stacy's Notes - Made these April 2005, pretty good. I think Tim liked them more than I did, which is odd! I used 2 cups of chocolate chips (melted 1 cup in a Pyrex bowl in the microwave), 1 stick Parkay Light butter, and old-fashioned Oatmeal (next time, try with instant oatmeal). I didn't bake these on ungreased cookie sheets; I used parchment paper and my silicone mat. These took 12 minutes in my oven. The dough was very sticky to roll into balls. I coated heavily in powdered sugar. :)
