Ingredients:

1 tablespoon maple syrup
1 tablespoon hoisin sauce
1 teaspoon Dijon mustard
1/4 teaspoon coarsely ground black pepper
2 - 6 oz salmon fillets (about 1 inch thick)
Cooking Spray
Directions:
  1. Preheat broiler.

  2. Combine first 4 ingredients in a small bowl; stir with a whisk.

  3. Place salmon, skin side down, on a broiler pan coated with cooking spray. Brush with maple mixture. Broil 10-12 minutes or until fish flakes easily when tested with a fork, brushing with maple mixture after 5 minutes and again after 10 minutes. Yield: 2 servings

  4. Stacy's Notes - Made this Nov 2004, we really liked it! I have renamed the recipe Maple-Hoisin Glazed Salmon since I already had one called Maple Glazed! We liked this one better because of the hoisin, we love hoisin sauce. This was really quick and easy. I didn't use the broiler, just preheated oven to 400 and used a Pyrex pan I sprayed with cooking spray. Cooked about 17-18 minutes at 400 instead of broiling. I basted the two fillets once with the maple mixture, and left the rest to spread over it when it came out of the oven. Served this with sweet potatoes and green beans. A definite keeper. :)
