Ingredients:
1 cup buttermilk biscuit mix
1/2 teaspoon creole seasoning
1/2 teaspoon salt
1 teaspoon paprika
1/2 cup finely chopped pecans
4 boneless, skin-on chicken breast halves
1/2 cup buttermilk
1/2 cup unsalted butter -- melted
Directions:
Preheat oven to 350. Combine biscuit mix, seasonings and pecans. Dip chicken in buttermilk and coat with dry mixture. Place chicken in a greased 9x13 inch baking pan. Pour butter over chicken and bake uncovered 1 hour.
Poster notes: This is a recipe that is modified from the cookbook "Come On In". I use boneless skinless chicken tenders and reduce baking time to 20-25 minutes and only drizzle a small amount of butter on top (not even close to 1/2 cup)
Stacy's Notes - Made this Feb 2003 - very good! I used 2 bone-in chicken breasts, 1/4 cup finely chopped pecans, 1/4 cup buttermilk and just eyeballed the seasonings. I also used about 1/4 cup tub margarine melted, to drizzle on top. Baked approximately 30-40 minutes in my oven. This was very good, a keeper!
