1 1/2 pounds boneless skinless chicken breasts
1 tablespoon vegetable oil
1 cup diced onion
2 teaspoons minced garlic
2 cans small white beans -- drained and rinsed
1 - 15 oz can whole kernel corn -- drained
2 - 14 oz cans chicken broth
2 cups thick and chunky salsa
3 teaspoons cumin

  1. Cut chicken into small cubes and brown in skillet in oil. Put remaining ingredients in crock pot; stir well. Stir in browned chicken. Cook on low for 8 - 10 hours.

  2. Stacy's Updated Notes - made this again July 2005 and made a few changes. This made a lot for the two of us the first time and it was a little on the soupy side. I prefer my soups to be thicker, more chunky and more like chowder. So, this time, I cut back on liquids. I used 2 b/s breasts, seasoned the same way, diced and browned, then I tore them into pretty tiny pieces when I added them to the crockpot. I only used about 1/2 an onion, 1 can of beans rather than 2, 1 can of chicken broth rather than 2, same on corn (1 can) and about 1 good cup of salsa. Used the same amount of garlic, about 2 t of cumin and added a pinch of chipotle powder at the end, when I was ready to serve it. We liked it better this way, and it made more like 4 good servings, rather than 6-8.

  3. Stacy's Notes - I made this Aug 2004. Good flavor, and it made a lot for the two of us. I used 2 boneless skinless breasts that I seasoned liberally with Tony's, garlic powder, pepper and onion powder. Then I diced them up and browned them. I used everything as the recipe calls for, except I attempted to substitute soaked dried white beans for the canned. But they did not cook completely in the crockpot in the 4 hours I had it on high, the beans were still a bit crunchy. So, next time, be sure to use canned beans as the recipe calls for! I think you could cook it on Low for an afternoon and not all day, since everything is already cooked before you add it to the crockpot. We each had a big bowl and I froze the rest for Daddy, it made a lot. :)
