This is ridiculously easy, and it actually tastes really good! It's my favorite black bean soup that I've tried and the only one I make now! :)

Ingredients:

2 - 15 oz cans no-salt-added black beans -- undrained
1/2 cup bottled salsa
1 tablespoon chili powder
1 - 16 oz can fat-free, less sodium chicken broth
1/2 cup shredded reduced-fat sharp cheddar cheese -- (2
ounces)
5 tablespoons low-fat sour cream
5 tablespoons minced green onions
2 1/2 tablespoons chopped fresh cilantro (see notes, I leave
this out)
Directions:
  1. Place beans and liquid in a medium saucepan; partially mash beans with a potato masher. Place over high heat; stir in salsa, chili powder, and broth. Bring to a boil. Ladle soup into bowls; top with cheese, sour cream, onions, and cilantro.

  2. Yield: 5 servings

  3. Stacy's Notes - Made this May 2003 for a soup and sandwich night. Very quick and easy and tasted good. My can of chicken broth was 14oz so I added more water, but this made the soup a bit thinner than we would have liked. Next time, don't add water. Also next time may want to add a bit more salsa. Definitely a keeper, this is so quick to make.
