Ingredients:

1 1/2 pounds grouper or other white fish fillets
Cooking spray
1 tablespoon fresh lime juice
1 tablespoon light mayo
1/8 teaspoon onion powder
1/8 teaspoon black pepper
1/2 cup fresh breadcrumbs
1 1/2 tablespoons butter or stick margarine -- melted
2 tablespoons chopped fresh parsley
Directions:
  1. Preheat oven to 425º. Place fish in an 11 X 7-inch baking dish coated with cooking spray.

  2. Combine lime juice, mayo, onion powder and pepper in a small bowl, and spread over fish. Sprinkle with breadcrumbs; drizzle with butter (or can spray with butter flavored cooking spray). Bake at 425º for 20 minutes or until fish flakes easily when tested with a fork. Sprinkle with parsley.

  3. Yield: 4 servings (serving size: 5 ounces fish)

  4. Stacy's Notes: Yum! Made this May 03 with tilapia and it was delicious! Had 3 fillets, used the full amounts on the mayo mixture, and also used fresh breadcrumbs. Pulsed 2 pieces whole wheat bread in food processor and had plenty left over (have made several times since, and I use one piece of wheat bread for two fillets). Also, just sprayed liberally with butter spray instead of drizzling butter. This is very good, a definite keeper and repeat.

  5. More Stacy's Notes - I've made this dozens of times since I first made the other notes. I usually use 2 tilapia fillets for us, 1 piece of whole wheat bread for the crumbs, and usually use the bottled lime juice. I love this one!
