I've tried numerous cornbread recipes through the years, but this is the one that Tim likes the best. So it's the only one I make now! :)

Ingredients:

shortening, to grease pan
1 cup milk
1/4 cup butter (1/2 stick) -- melted
1 egg
1 1/4 cups cornmeal
1 cup all-purpose flour -- or less if desired
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
Directions:
  1. Heat oven to 400. Grease the bottom and sides of an 8 inch square metal baking pan with the shortening.

  2. Beat the milk, margarine and egg in a large bowl with wire whisk until well mixed. Stir in cornmeal, flour, sugar, baking powder and salt, just until the flour is moistened. Batter will be lumpy. Pour into greased metal pan.

  3. Bake 20-25 minutes, or until golden brown and toothpick comes out clean.
