I've only made this once, but probably should try it again! So many recipes, so little time! :)

Ingredients:

1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon salt
1/8 teaspoon black pepper
4 - 6 oz fillets red snapper or other firm whitefish (see
notes)
cooking spray
1 tablespoon butter -- softened
1 canned chipotle chile in adobo sauce -- finely minced
lemon wedges
Directions:
  1. Preheat oven to 400 degrees.

  2. Combine first 4 ingredients; sprinkle evenly over fish. Place fish on a baking sheet coated with cooking spray; bake 15 minutes or until fish flakes easily when tested with a fork.

  3. While fish bakes, combine butter and chile. Spread butter mixture evenly over fish. Serve with lemon wedges.

  4. Misc Poster Notes. One used catfish and it worked great. Another poster said "I used mahi mahi and the full amount of spices on 2 pieces. Didn't use quite the full amount of chipotle butter. This was so quick and easy I will definitely make again."

  5. Stacy's Notes: Made July 2003. I used 2 frozen mahi-mahi fillets from Sam's. Tim loved this! The chipotle butter was too spicy for me, but Tim loved it and said it made the dish for him. A definite repeat for Tim! :)
