Pretzel Crusted Cod

A quick and easy way to bake cod in the oven!

Instructions
  1. Preheat oven to 425 degrees.
  2. Coat a small baking dish with olive or vegetable oil (or whatever oil you have), or spray with cooking spray.
  3. Dry the cod fillets as best you can with paper towels and get them as dry as you possibly can. Place them in your prepared baking dish.
  4. Crush the pretzels (either in a small food processor, or just in a plastic bag with a rolling pin or other tool).
  5. Make the sauce by mixing the mustard and mayo. You can add the salt and pepper directly to the fillets, or add to the sauce.
  6. Spread half the sauce over the cod fillets and sprinkle with fresh or dried dill. Coat with half the crushed pretzels, and try to press the coating into the fillets as much as you can, so it will stick.
  7. Carefully flip the fillets over in the baking dish and repeat with the sauce, dill and crushed pretzels.
  8. Tip your baking dish and spoon any extra oil onto the second side, or spray both sides with cooking spray.
  9. Bake fillets in 425 degree oven for 10-15 minutes, or until they are flaky when tested with a fork. You can turn them over half way through the cooking time, if you prefer.
  10. Serve and enjoy!

Stacy's Notes: 
I've made this a couple of times, and it's very similar to my kettle crusted cod that we also enjoy. Same concept, crushed salty chips on the outside, a nice slather of a mayo based sauce on the fish, baked up until crispy.  I usually crush my pretzels in a ziploc bag with a rolling pin, but the pieces are larger, so it's not as pretty and even as if you used a food processor (but I hate to clean up another item!). I usually cut the sauce in half for two fillets, although it would be great with the full measure 🙂  It usually takes a little longer in my oven for the fillets to be done, about 18 minutes or so. 
Serve with your favorite sides and enjoy some salty pretzel crusted baked cod 🙂
