Stacy’s Notes:
I’ve made this a couple of times, and it’s very similar to my kettle crusted cod that we also enjoy. Same concept, crushed salty chips on the outside, a nice slather of a mayo based sauce on the fish, baked up until crispy. I usually crush my pretzels in a ziploc bag with a rolling pin, but the pieces are larger, so it’s not as pretty and even as if you used a food processor (but I hate to clean up another item!). I usually cut the sauce in half for two fillets, although it would be great with the full measure 🙂 It usually takes a little longer in my oven for the fillets to be done, about 18 minutes or so.
Serve with your favorite sides and enjoy some salty pretzel crusted baked cod 🙂
