Pineapple Casserole

A family favorite at the holidays, this Pineapple Casserole is a great side dish to serve with ham. This recipe is quick and easy to make and could serve as a side dish or even a dessert in a pinch.  The recipe is easily doubled, tripled or even quadrupled!

Instructions
  1. Preheat oven to 350.
  2. Mix cracker crumbs with the melted butter.
  3. Combine flour, sugar and 3 T. pineapple juice. Add cheese and pineapple and stir. Spoon into casserole dish.
  4. Cover casserole with crumbs.
  5. Bake 25 minutes or until heated through.

Stacy's Notes:

You can double, triple, or quadruple this recipe. Just put in a larger dish and bake a bit longer.

I use my round 1.8 quart Corningware casserole dish (spray well).  I have used sharp, medium or mild cheddar cheese and it always comes out great, a definite keeper!
