A family favorite at the holidays, this Pineapple Casserole is a great side dish to serve with ham. This recipe is quick and easy to make and could serve as a side dish or even a dessert in a pinch. The recipe is easily doubled, tripled or even quadrupled!

Ingredients
- 1 20 oz can pineapple chunks drain and keep juice
- 3 tablespoons flour
- 1/2 cup sugar
- 1/2 cup grated sharp or mild cheddar cheese
- 3 tablespoons melted butter 3-4, as needed
- 3/4 cup crushed Ritz crackers 3/4-1 cup (I usually use less)

Instructions
- Preheat oven to 350.
- Mix cracker crumbs with the melted butter.
- Combine flour, sugar and 3 T. pineapple juice. Add cheese and pineapple and stir. Spoon into casserole dish.
- Cover casserole with crumbs.
- Bake 25 minutes or until heated through.

You can double, triple, or quadruple this recipe. Just put in a larger dish and bake a bit longer.
I use my round 1.8 quart Corningware casserole dish (spray well). I have used sharp, medium or mild cheddar cheese and it always comes out great, a definite keeper!
