Instant Pot Peachy Balsamic Chicken
An easy recipe for peachy balsamic chicken that you can make in your electric pressure cooker (and I'm sure could be very easily adapted for the stovetop).

  1. Turn Instant Pot to saute mode. Add olive oil once it is hot. Add chicken and brown on all sides. After the chicken is browned, add the balsamic vinegar and chicken stock.
  2. Lock the Instant Pot and seal. Set to Manual/High Pressure for 10 minutes (see notes; I cooked mine a little less because I had 2 small chicken breasts).
  3. After the 10 minutes are finished, perform a Quick Release of the Instant Pot (be careful of escaping steam). See Notes, I did not quick release but it let it release naturally for a few minutes
  4. Remove chicken from Instant Pot and set aside. To the IP, add the peaches, honey and soy sauce to the sauce remaining in the pot from cooking. (See Notes: I added a few more spices plus a dash more balsamic here, I love balsamic vinegar!). Whisk together the cornstarch and water and then add the cornstarch slurry to the IP. Cook and stir until the sauce thickens.
  5. Pour sauce over the chicken to serve. Serve with steamed rice and garnish with slivered almonds. Or serve over cooked pasta noodles. Top it off with freshly grated pepper. Enjoy!
Recipe Notes

Stacy's Notes:  I mostly followed the recipe, but modified for our tastes and needs.

  • Instead of the full pound of chicken, I used two small boneless skinless breasts (and therefore lowered the cooking time from 10 minutes to 8).
  • I ended up adding more balsamic vinegar (I love the flavor), so ours is more of a Balsamic Peach Chicken 🙂  I added balsamic at the beginning, as the recipe states, and then another dash when I added the honey and soy sauce.
  • I seasoned my chicken breasts with salt, pepper and Mrs Dash chicken seasoning.
  • I did not quick release the chicken, but let it natural release for a few minutes, so our two pieces were falling apart. You can carefully quick release, or if you're ok with them falling apart, and have the time, let them NPR.
  • I also added a bit more seasonings, some basil and a dash of red chili flakes.
  • The original recipe suggested rice or pasta, and next time, I would use one of those. I served ours over whole wheat couscous, which I love, but Tim does not.
  • We served ours with roasted carrots and steamed broccoli, for a nice healthy meal 🙂
  • A nice basic dish, that could also easily be made on the stovetop!
