Remove chicken from Instant Pot and set aside. To the IP, add the peaches, honey and soy sauce to the sauce remaining in the pot from cooking. (See Notes: I added a few more spices plus a dash more balsamic here, I love balsamic vinegar!). Whisk together the cornstarch and water and then add the cornstarch slurry to the IP. Cook and stir until the sauce thickens.
