A fun way to make a quick taco pie for supper, using your Instant Pot!

Instant Pot Easy Taco Pie
If you have a springform pan that fits in your Instant Pot, use it to make an easy taco pie for supper tonight 🙂

  1. Spray your 7" springform pan with cooking spray and set aside.
  2. On the stovetop (or in your Instant Pot if you prefer to use Saute mode, just know you'll need to clean it out before you cook the pie), brown one pound of ground beef or one package of veggie crumbles (I used Morningstar Crumbles). Add taco seasoning and cook as you would for tacos. I'm sure you could use chicken or turkey too!
  3. Add some salsa, or picante sauce or even a mostly drained can of diced tomatoes with green chilis to the meat mixture. You just want it a little thicker and more flavorful.
  4. Take the sprayed springform pan and lay a flour tortilla in the bottom. Spread an even layer of canned refried beans, then 1/4 to 1/3 of your meat mixture (I did three layers, but next time I may try to squeeze four in), then a layer of shredded cheese. I had colby jack open, so I used that. Repeat layers, 3-4 times, ending with cheese.
  5. Cover your springform pan loosely with a piece of aluminum foil.
  6. Put one cup of water in the bottom of the inner pot of your Instant Pot or pressure cooker. Place the trivet that came with the IP in the bottom, then carefully lower your filled springform pan onto the trivet.
  7. Set the Instant Pot for 10 minutes on High Pressure. Once the 10 minutes are up, perform a Quick Release (controlled short bursts to release the steam, until the pin drops).
  8. Carefully remove the springform pan (I used my silicon oven mitts to just grab the entire trivet) from the IP. Uncover and serve!
  9. Note: I cut mine right after it came out, and it was a bit ooey and gooey. It did not cut all that well, but it still tasted great! It might set up a bit more if you let it rest after coming out, before you cut it.
  10. Serve with your favorite sides such as sour cream, guacamole, chips, corn, rice, etc. Enjoy!
