What’s For Dinner – May 27-June 2, 2018

Hey Y’all!

We had an unusual week this past week! I had menu items planned, but life got in the way and we ended up eating out more than I had planned 🙁

We visited Dickey’s BBQ twice, which is Tim’s favorite restaurant, I think! We had an unplanned doctor visit for me, as I’m having more blackouts. The doctors seem fairly sure that my heart is stopping when I blackout, and I imagine very soon I will be scheduled for surgery, to install a pacemaker. I’ll try to update the YouTube channel if at all possible, or at least with a blog post here.

After hearing a doctor tell me that “your heart stopped beating for five full seconds”, I decided that I might want to spend a little more time with Tim 🙂 So, I went with him to the golf course on Thursday, in spite of the heat (very out of character for me!). We had fun and then stopped for fast food on the way home, at nearly 9 PM. I don’t know about you, but I do NOT like to eat that late! But I enjoyed every minute of being with Tim and our impromptu date night out 🙂

The rest of our meals were all homemade, and all quite delicious!

Monday was Memorial Day. We had ribs, potato salad, baked beans, grilled corn on the cob, grilled portobello mushrooms and grilled asparagus.

Wednesday, I tried a new recipe for a taco pie, and I tried it in the Instant Pot. I’ll have a video and recipe posted for this soon! I also made a salad with olives, avocado, cheese and my homemade Mexican ranch dressing. That recipe is here.

Friday, I made one of my favorite meals – chicken pesto flatbreads! I made some basil pesto earlier in the week, and used most of it on these flatbreads. We had another salad with this, and it had cheese, bacon bits, croutons, pine nuts (and tomato for Tim). I made a quick dressing of white wine vinegar, dried oregano and basil, olive oil, salt and pepper. Sooooo good!

Saturday, I tried a new recipe that I had gotten from my sister Gail for BBQ Chicken Bowls. These were very easy to do, and are totally versatile, just use what you have on hand and what you like. The recipe outline with my notes as to what I did is here. It was delicious, and a definite keeper!
