Homemade Egg Rolls

Just a guideline I used to make some easy and very delicious home made egg rolls!

Homemade Egg Rolls
Easy to make, cook in the air fryer and then freeze for later use 🙂
Instructions
  1. Make the filling: I browned 1/2 pound ground turkey, and then added onion powder, garlic powder, powdered ginger, & white pepper. After the meat was brown, drain any grease and then add 1/2 bag cole slaw mix, and optionally, more diced carrots & onions to wilt. Tasted & adjusted and I added more jarred minced garlic, squeeze minced ginger, lots of liquid aminos or you can use soy sauce, and white & black pepper.  Take mixture off the heat, then add a dab of sesame oil. Cool the filling.
  2. Make Egg Rolls: Once the filling has cooled enough to handle, begin assembling the egg rolls. Open a package of prepared egg roll wrappers and place a wet paper towel over the top (you always want to keep them damp and not let them dry out). Place one egg roll wrapper on a diagonal, or diamond shape, and point one end towards your body. Place a small amount (maybe 1-2 tablespoons) in the middle, going horizontal, and fold up the edges from either side. Then take the portion closest to your body and fold over, it will make an envelope shape. Now, you have 2 sides at the top that you need to wet with either water or an egg wash (I mixed 1 egg with a dab of water, whisked well and brushed on with a pastry brush). Roll up and seal, with seam side facing down. I got 8-10 egg rolls out of 1/2 pound of meat and 1/2 bag of cole slaw mix.
  3. Air Fry Egg Rolls: Spritz the outside of the egg rolls well with olive oil spray. I also sprayed my basket, but not well enough, since one or two did stick. Air fry at 360 degrees for 10 minutes, flipping and spraying each roll again well at the five minute mark. Your air fryer may require a different amount of time, but this worked in my basket style. Optionally, you can pay fry or oven bake these as well.
  4. Freezer Instructions: After I cooked the egg rolls in the air fryer, I let them cool completely. I wrapped each one in plastic wrap and then stuck the remainder in a freezer-safe ziploc bag. I froze them and take out as many as needed (usually 2 at a time), and let thaw a bit. Then I microwave them for 60-90 seconds and reheat in the air fryer. I believe I cooked at a lower temp, probably 330 or 340 degrees for about 4-6 minutes, just until they were heated through.
