A very quick and easy side dish that we love to have in the summer with fresh zucchini!

Ingredients
- 2 zucchini or one per person
- olive oil
- minced garlic
- salt and pepper
- Parmesan cheese

Instructions
- Spiralize your zucchini. Heat some olive oil in a skillet and add minced garlic, stir for one minute (don't let it burn).
- Add your zucchini noodles and cook until soft.
- Season with salt and pepper, and then top with grated or shredded Parmesan cheese.
- Serve and enjoy!
Recipe Notes
Stacy's Notes: To make the spiralized noodles, I use a vegetti that I purchased at either HomeGoods or Marshalls. You can use any other spiralizer.
We really like these, so I do one zucchini for each of us, but if you are serving as a side dish with other items, you can probably use 1/2 zucchini per person.
Since this recipe has so few ingredients, it is really important to use a good quality parmesan cheese!
