Easy Zucchini Noodles
An easy way to fix zucchini as a side dish

Instructions
  1. Spiralize your zucchini. Heat some olive oil in a skillet and add minced garlic, stir for one minute (don’t let it burn).
  2. Add your zucchini noodles and cook until soft.
  3. Season with salt and pepper, and then top with grated or shredded Parmesan cheese.
  4. Serve and enjoy!

Stacy’s Notes: To make the spiralized noodles, I use a vegetti that I purchased at either HomeGoods or Marshalls. You can use any other spiralizer.

We really like these, so I do one zucchini for each of us, but if you are serving as a side dish with other items, you can probably use 1/2 zucchini per person.

Since this recipe has so few ingredients, it is really important to use a good quality parmesan cheese!
