One of my favorite meals, and great with a big salad for an easy supper 🙂

Ingredients
- 1 package naan or flatbreads I buy a package with 2 flatbreads
- basil pesto I use homemade, but use jarred if you have it
- 1 boneless skinless chicken breast
- tomato optional, see notes
- 1/2 cup mozzarella cheese I just eyeball & never measure
- 2 tablespoons Parmesan cheese I just eyeball
- salt and pepper

Instructions
- I grill one chicken breast for the two of us, for two flatbreads. I season the single breast with basil, salt and pepper and grill on my indoor grill. Take off and slice into thin slivers.
- Take the two prepared naan or flatbread and slather with basil pesto. I always use my homemade pesto, or you can easily substitute jarred pesto.
- On top of the pesto, lay out the slices of chicken breast. If you want to add tomato, add diced tomato. Sprinkle a good layer of shredded mozzarella cheese (I never measure), and then sprinkle some shredded parmesan on top. Finish with salt and pepper.
- I bake these flatbreads on my pizza stone, or you can just use a regular baking sheet. Put the pizza stone in your preheated 400 degree oven and bake until the cheese is melted and they are turning golden. This takes 8-10 minutes in my oven.
- Cut each flatbread into wedges to serve. We always have a big side salad with these flatbreads. Enjoy!
