Slow Cooker Thai Chicken

A quick and easy crockpot meal!  This is not authentic Thai food, but a simple copycat type meal, that uses ingredients you might already have on hand.  Try this today for an easy weeknight meal!

Slow Cooker Thai Chicken
Quick and easy crockpot chicken dish using peanut butter, salsa and other flavors to make a knock-off Thai flavored dish. Serve this over cellophane noodles, spaghetti, rice or whatever you like for an easy Asian inspired dish.

  1. Original Recipe: Place chicken in crockpot. Mix other ingredients except cilantro and peanuts. Pour over chicken. Cook for 4 hours on low. Garnish with cilantro and peanuts.
  2. Stacy's Modifications - I use whatever meat I have on hand, either boneless skinless breasts or thighs, we like both. I usually use crunchy peanut butter, and if I do, then I usually skip the garnish with peanuts. I do not like cilantro, so I don't use that as a garnish. I've used both bottled creamy and crunchy and also natural peanut butter, and they all work fine.
Recipe Notes

Stacy's Notes:  I often serve this over noodles, either asian cellophane noodles or even spaghetti noodles in a pinch. It makes a lot of sauce and we like the sauce over noodles. I'm sure you could do rice, but we haven't tried it with rice. I usually serve something Asian inspired on the side, like veggies, stir fry veggies, potstickers, egg rolls or crab rangoon. This makes a quick and easy Asian inspired dish. Enjoy!
