A fun twist on meatloaf!

Mini Meatloaves
I much prefer these little mini meatloaves, as opposed to one large loaf baked in the oven.

  1. Preheat oven to 400 degrees.
  2. Combine ketchup and mustard, stirring well with a whisk. Reserve 2 1/2 tablespoons ketchup mixture.
  3. Combine remaining ketchup mixture, beef, and next 6 ingredients (beef through egg) in a large bowl, stirring to combine.
  4. Divide beef mixture into 4 equal portions (or 5 total). Shape each portion into a 4 x 21/2-inch loaf; place loaves on a jelly roll pan coated with cooking spray. (See notes; I line with foil and then spray).
  5. Spread about 2 teaspoons reserved ketchup mixture evenly over each loaf.
  6. Bake at 400 degrees for 25 minutes or until done.

Stacy's Notes:

  • I've been making these for about 18 years.  Tim loves meatloaf, but I do not, but we both enjoy these.  And they work for his meatloaf sandwiches for lunches too 🙂
  • I have used ground chuck, ground beef and ground sirloin (but have never tried with ground turkey or chicken). I don't deviate from this recipe, and it's always worked.  We prefer to have these mini meatloaves with some kind of potato and veggie, and sometimes a salad.  A nice comforting meal 🙂
  • For easy cleanup, I just line a cookie sheet with foil and spray well with cooking spray.  These don't produce too much grease, but if you don't line the pan, you'll have a nice mess on your hands when it comes time to do dishes, LOL!
  • Tip:  If you don't have packaged bread crumbs in the house, no worries, just make your own! Take some white or whole wheat sandwich bread, pulse in a food processor or blender and season. Since this is a beef dish, I prefer to use salt and pepper, and a good amount of a steak seasoning (mine is salt free).
