An easy vinaigrette with a great fall flavor!

Ingredients
- 1/3 cup maple syrup
- 2 tablespoons finely chopped shallots I sub finely diced red onion
- 3 tablespoons dijon mustard
- 2 tablespoons red wine vinegar
- 1 tablespoon olive oil
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon salt

Instructions
- Combine all ingredients in a medium bowl, stirring with a whisk. Yield: about 3/4 cup
Recipe Notes
Stacy's Notes - I cut this in half for the two of us. I never have shallots on hand, so I always just use finely diced red onion. Be sure to use a good, pure Maple syrup and not pancake syrup!
This works equally well on a fall or harvest salad (I love the combination of chunks of cheddar cheese, toasted walnuts and chopped Gala or Honeycrisp apples), as well as on a big salad with grilled chicken - year round!
