A healthier alternative to tacos!

Ingredients
- 1 cup lentils see notes
- 2 tablespoons oil
- 1 onion diced
- 1 clove garlic minced
- 1 tablespoon chili powder
- 2 teaspoons cumin
- 1 teaspoon oregano
- 2 1/2 cups chicken broth
- 1 cup salsa
- taco shells & toppings

Instructions
- Rinse the lentils and drain them.
- In a large skillet, saute the onion and garlic together. Add the lentils and spices, cook for a minute. Add the broth and bring to a boil.
- Reduce the heat, cover and simmer for about 30 minutes. Uncover and cook a few more minutes to thicken. Add the salsa.
- Serve in taco shells with lettuce and tomato, if desired.

Stacy's Notes: I've made these a few times and I like them (Tim is ok with them, but he obviously prefers meat!). I have made the recipe as written, but it makes way too much for the two of us, so these days I tend to cut it in half. We've mostly served this in hard shells, but I have had mine in a taco salad before and liked it. If I make tacos for Tim and just want enough for me for dinner, I cut the recipe into a 1/4 cup of lentils and scale the seasonings and salsa down accordingly 🙂
