Lentil Tacos
I like to make these sometime, it’s a nice alternative to using ground beef or ground turkey for Taco Tuesday! Be sure to read my notes 🙂

  1. Rinse the lentils and drain them.
  2. In a large skillet, saute the onion and garlic together. Add the lentils and spices, cook for a minute. Add the broth and bring to a boil.
  3. Reduce the heat, cover and simmer for about 30 minutes. Uncover and cook a few more minutes to thicken. Add the salsa.
  4. Serve in taco shells with lettuce and tomato, if desired.

Stacy’s Notes: I’ve made these a few times and I like them (Tim is ok with them, but he obviously prefers meat!).  I have made the recipe as written, but it makes way too much for the two of us, so these days I tend to cut it in half.  We’ve mostly served this in hard shells, but I have had mine in a taco salad before and liked it.  If I make tacos for Tim and just want enough for me for dinner, I cut the recipe into a 1/4 cup of lentils and scale the seasonings and salsa down accordingly 🙂
