An easy recipe for a quick weeknight chili, though I usually make this one a bit thicker and use it for “hot dog chili”, to top hot dogs with chili and cheese 🙂 It works equally well as just a quick chili though, for a quick easy meal.

Ingredients
- 1 pound ground beef or turkey
- 1 small onion chopped
- 1 teaspoon minced garlic
- 1 16 oz can chili beans undrained
- 1 6 oz can tomato paste
- 1 1/2 cups water or less if you want thicker chili
- 1 tablespoon chili powder
- salt and pepper to taste
- additional seasonings optional (such as onion powder, garlic powder, chipotle powder, etc)

Instructions
- Combine ground meat and onion in a Dutch oven or small soup pot. Cook until beef is nearly brown, then add garlic.
- Drain any grease and return ground meat mixture to Dutch oven.
- Add beans and remaining ingredients; cover, reduce heat and simmer 15 minutes, stirring occasionally.

Stacy's Notes: this is an easy weeknight chili if you have a can of chili beans. You can use ground beef or turkey (I have not tried it with ground chicken). I usually use this for my "hot dog" chili, which means we just serve it over hot dogs with lots of shredded cheese. I usually use less water, so the chili is thicker, so it works better for chili dogs.
